1 1/2 Cups Watermelon, peeled, cubed
1 1/2 Cups Cucumber, peeled, cubed
1 Mozarella (Bufala), cubed
1 Red Onion, peeled, coarsly choped
Freshly Squeezed Lime Juice from 2 Limes
1 Tablespoon Soy-Sauce
4-5 Tablespoons Olive Oil
2 Tablespoons of Maple Sirup
6-8 stripes of crispy bacon, copped
8 Mint Leaves, coarsely chopped
1-2 Tablespoons Chilli Flakes (or to your liking)
Salt
Mix all ingredients except for the bacon and season well with salt to your liking. Mix with the bacon - store in a container and let rest and marinade for 1-2 hours in the fridge. This salad is best served chilled.
